Heirloom Tomato Avocado Toast



  • 1/2 cup balsamic vinegar
  • 2-3 slices hearty, whole grain bread
  • olive oil
  • 2 small heirloom tomatoes, thinly sliced
  • 1/2 a ripe avocado
  • 1/4 cup fresh basil, chopped
  • sea salt
  • black pepper


  • Make the balsamic reduction by adding the balsamic vinegar to a small saucepan over medium-high heat. Bring the balsamic to a boil, whisking constantly. Reduce heat and simmer for 10-15 minutes or until balsamic has reduced by half and is thick enough to coat the back of a spoon. Make sure you keep an eye on it -- it burns quickly.

  • Drizzle each slice of bread with olive oil and toast.
  • Evenly divide the avocado between the pieces of toast and use the back of a fork to smash the avocado. Layer the sliced tomatoes on top, sprinkle with fresh basil, and drizzle with the balsamic reduction.
  • Garnish with sea salt and black pepper.
  • Serve and enjoy!

It's no surprise that steel cut oats are considered a "power food" because they are an excellent source of protein, soluble and insoluble fiber and select vitamins and minerals. Steel cut oats are dense and chewy as a result of being passed through sharp, steel blades that cut them into thin slices that helps retain more fiber and protein. - 1 1/2 cups steel cut oats

- 1/2 teaspoon ground ginger

- 1 teaspoon baking powder

- 4 cups unsweetened vanilla almond milk

- 2 cups light unsweetened coconut milk

1 1/2 cups fresh blueberries

- 1/4 cups dried blueberries

- 1/4 cup unsweetened coconut flake

- 2 cups fresh blueberries for sauce


Pre-heat oven o 350 degrees. Combine all ingredients, except the blueberries for the sauce into a large bowl adding the blueberries and coconut last. Bake fore about one hour. The oatmeal will appear not done, but remove it from the oven and let it cool to room temperature. Refrigerate overnight for best results. It will thicken nice and become a perfect consistency. 

For the sauce, heat the blueberries with a splash of water over medium/high heat. Once they begin sizzling, reduce heat to medium and cook for about 5 minutes until saucy. Mash the blueberries for a soupy consistency. Drizzle the blueberry sauce over the oatmeal before serving.

The Art of the Mason Jar

Convenience plays a large role in my daily routine. I joke sometimes that my purse is a suitcase, because it is large and in charge! I just like to feel prepared. Every morning I "get ready for the day." This means regardless of the day, rain or shine, plans or no plans, I always make an effort to get myself together, because it makes me feel good. Do something everyday that makes you feel good. Maybe it's an early morning spin class or a meditation yoga class. By starting your day off right, you're setting the tone for your day, and I promise you, it will be a good day if you make it a good day! 

Being prepared makes all the difference when it comes to healthy food choices. Between our busy daily routines and juggling X, Y and Z throughout the day, sometimes running to the nearest fast casual restaurant or deli to pick up a bite to eat is easier and more convenient than prepping ahead. Being prepared with sometime to eat before you become starving and want to eat everything in sight makes all the difference to your health and nutrition. 

I've found that using mason jars to prep food ahead and organize for a couple of days makes a really easy "grab and go" in your own home. Not to mention, people will comment because it actually looks pretty cool too! 

If your mornings are busy prep a greek yogurt berry bowl in a mason jar and take it to go. For lunch or a snack, layer power veggies in a mason jar with a little dressing on the side. Simple Easy and nutritious!

1/2 cup blueberries

1/2 cup strawberries

1 small peach diced

I love when I come across an ingredient with multiple applications, especially one that is considered among the healthiest foods on the planet. They're a whole grain food, non-GMO and naturally gluten free. Don't be fooled by their small size, they're loaded with antioxidants and a high quality protein choice. Strawberry Banana Chia Seed Pudding
- 1/2 cup chia seeds
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon powder
- 2 cups coconut milk (or almond milk) 
- 1/2 cup fresh strawberries
- 1 banana

Blend all ingredients except chia seeds. Gently whisk in chia seeds and refrigerate for at least four hours, or overnight. Add fresh berries as a garnish.

AB&J - Almond Butter & Jam Chia Seed Pudding
- 1/2 cup chia seeds
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon powder
- 2 cups coconut milk (or almond milk) 
- 3 Tablespoons almond butter
- 3 Tablespoons raspberry jam
- 1 banana

Blend all ingredients except chia seeds. Gently whisk in chia seeds and refrigerate for at least four hours, or overnight. 

The Alkaline Magic

We know that we should be drinking at least eight 8-ounce glasses of water each day, but how many of you can say that you actually accomplish that? More than 50% of our bodies are made up of water, and staying properly hydrated is essential to every bodily function. 

If you think about it, regular old water is practically a miracle drink. It keeps our bodies hydrated, and it's calorie-free! Several clients have asked me if I believe Alkaline water is worth the extra investment or a hoax. 

Let's look at the numbers...Some of you may recall from high chemistry (or not, so I'll offer a refresher course) that the pH is the measure of the acidity or alkalinity of any substance or solution. The pH (potential hydrogen) scale runs from 0-14, with 7 as the neutral mid-point. Liquids with a pH of 1 are very acidic, and liquids with a pH of 13 are very alkaline.

Pure water is right in the middle of the spectrum, with a pH that is close to 7. Alkaline water, also called ionized water, has a higher pH than regular water, generally between 7 and 9.5. 

Drinking Alkaline water during pregnancy has proven to have some very strong benefits for the mama and the baby. Here are a few to note: 

  • Alkaline water helps your body balance its natural pH level during pregnancy. As the pregnant body tends to be more acidic than non-pregnant body.
  • It helps to reduce morning sickness and nausea during pregnancy. During the first few months of pregnancy, the body gives alkaline minerals to placenta in order to neutralize the acidic discharges from fetus. It is known that acidity alleviates morning sickness in pregnant women. So, while drinking alkaline water, we can immediately find the difference, as the morning sickness reduces.
  • It is found that drinking alkaline water also helps in smoother deliveries.
  • With the use of alkaline water, the likelihood of jaundice in baby as well as the mother can be reduced.
  • Alkaline water also helps increase lactation in mothers.
  • Alkaline water has natural calcium in it which helps the pregnant women have healthy bones and also reduces calcium loss while also helping the baby have healthy teeth and bones.
  • Drinking alkaline water helps the new moms recover fast after delivery.
  • It helps to rehydrate your body as does the normal water. Hydrated body can fight against headaches, nausea, vomiting and many other pregnancy effects.

Winter Veggie Quinoa Salad

Winter in a bowl! Quinoa has been around forever, but in the last couple of years it's really become a show stopper! I absolutely love quinoa. Quinoa is one of the most protein-rich foods you can eat. It is a complete protein containing all nine essential amino acids. It is also a great source of Iron, and energy. Take the benefits of quinoa paired with pure vitamins and antioxidants found in winters prime produce and you have a heart healthy delicious meal! 

Try this winter veggie quinoa salad with butternut squash, cranberries and pumpkin seeds.

4 Servings | 30 Minutes

  • 3 cups butternut squash, chopped
  • 1 Tbsp. olive oil
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/2 cup cooked cannellini beans 
  • ⅓ cup dried cranberries
  • 3 Tbsp. toasted pumpkin seeds
  • salt and black pepper


  • 1/4 cup extra virgin olive oil
  • 1/4 cup white wine vinegar
  • 1 tsp. Dijon mustard
  • 1 garlic clove, minced
  • 1 tsp. parsley, chopped
  • salt and black pepper

Preheat the oven to 400F. In a large bowl, toss the butternut squash with olive oil. Season with salt and pepper, to taste. Arrange coated squash on a baking sheet in a single layer. Roast for 20-25 minutes or until squash is tender and lightly browned. While the squash is roasting, rinse quinoa under cold water until water runs clear. Place quinoa and water in a medium saucepan. Bring to a boil, reduce to a simmer, and cook partially covered until liquid is absorbed, about 15 minutes.

To assemble the salad, combine the cooked quinoa, roasted squash, cranberries, toasted pumpkin seeds in a large bowl. Add the vinaigrette and mix until combined. Season with salt and pepper, to taste. 

For the vinaigrette, whisk all the ingredients in a small bowl until combined. Season with salt and pepper, to taste.

March Madness Recipes

My theme for the month of March has been healthy "Green Machine" recipes, loaded with fresh vegetables. The below two recipes are simple, easy and delicious! Portion control and moderation are key components in healthy living, so these recipes have pre-determined portions, which make it really easy for you! Avocado, Smoked Salmon & Egg Boat

Avocado, Smoked Salmon & Egg Boat


2 Avocados

Juice of 1 lemon

2 oz Smoked Salmon

4 eggs

Fresh Dill

Red Pepper Flakes

Salt & Pepper


Halve the avocados and remove the pit. Drizzle fresh lemon juice over the avocado and season with salt and pepper to liking. Preheat the oven to 425 F. Line the avocados with a strip of smoked salmon. Crack the eggs, and scoop out the yolk and some egg white to fill the avocado hole. Keep in mind that you can increase the avocado hole after you remove the pit if you'd like it to hold more egg! Season with red pepper flakes, dill, salt and pepper. Bake on a cookie sheet for 20 minutes, or until egg is to desired doneness. Serve warm and enjoy! 

Mini Egg-White Vegetable Frittata

Mini Egg-White Vegetable Frittata


7 egg whites 

1/4 cup bell peppers (red, yellow or green - try a mixture!)

1 1/2 cups fresh spinach, stems removed and roughly chopped

2/3 cup water

1/3 cup goat feta

salt & pepper

Red Pepper Flakes* (optional)


Preheat oven to 375 F. In a large bowl whisk together egg whites, salt, pepper and red pepper flakes for an added spice. Measure the egg whites and add water until you have 2 cups. Discard any extra water. Spray the muffin tin with cooking spray and arrange vegetables inside each tin. Pour egg white mixture to fill each tin until 2/3 full. Bake for 15 minutes and then sprinkle with goat feta on top. Continue baking for another 8-10 minutes until frittata is browned and fluffy. Remove from tin and serve warm. Enjoy! 



Champagne Punch

Aren't "holidays" the perfect excuse to have a cocktail? 

Apparently today is World Bartender Day, which sounds like a great reason to be your own bartender and mix up some cocktails at home! Whether you're having friends over for dinner or just getting cozy with some Netflix, I recommend a champagne cocktail to add some sparkle to your evening. Today I'm sharing a recipe for my favorite Champagne Punch, which is just as beautiful as it is delicious and refreshing! This recipe is also perfect if you're hosting an Oscars party this weekend and need a glamorous drink to share. Top with fresh raspberries and enjoy! 

Champagne Punch


  • 3 ounces grenadine
  • 3 ounces Cointreau
  • 2 ounces brandy
  • 2 3/4 cups Champagne
  • Raspberries


Combine grenadine, Cointreau, brandy and Champagne over ice. Stir gently. Ladle punch into glasses. Garnish punch with raspberries. Makes four servings.


Random Acts of Kindness

Did you know that today is National Random Acts of Kindness Day? All over the nation, people are surprising strangers and friends alike with kind actions both large or small. I love the idea of putting a smile on someone's face for no reason except just that!

If you're looking for a way to show kindness to someone today, I'm sharing a few ways to spread joy throughout your day below - and why not keep it going throughout the year? How are you adding some kindness to the world today?

1. Pay it backward: Whether you're in line at the coffee shop drive through or at your favorite restaurant, surprise the stranger behind you by paying for their order! Chances are, they'll be so happy that they'll continue the kindness on by paying for another's order - the gift that keeps on giving!

2. Share the gift of food: I have so much fun cooking for people I love as well as new friends and strangers! Pull out your favorite recipe and spend some time preparing a dish to surprise someone with. You can make your family smile by serving their favorite dinner, bring in fresh baked cookies for your co-workers, or prepare a hot meal to share at your local homeless shelter. Food is a great way to instantly bond people!

3. Dig in to help the environment: Plant a tree, do a neighborhood clean up, help a neighbor weed their vegetable garden, or any other small act to help beautify our earth. 

4. Think small: Even the smallest actions can brighten someone else's day! Give a stranger a compliment, hold the door open behind you, let someone cut in line at the grocery store, smile at everyone you pass, send a "just because" card to an old friend, or simply let your friends and family know you appreciate them. You'll never know what your small act can do for someone's attitude!

5. Be kind to yourself: You can only help others when you are taking care of yourself. Take some time today to do something that fulfills you and helps you recharge! What does that mean for you? Read that book you've been saving for a rainy day or sip a latte with an old friend, and remember to always be kind to yourself!

Are you ready for Valentine's Day? This holiday can get a bad rep sometimes, but any day that is all about romance, wine, and dessert is just fine with me! I can't help but make one of my favorite desserts, Cannoli Siciliana, when Valentine's Day comes around - if you're staying in this year, check out my recipe below for a beautiful & sweet way to finish your romantic dinner. Cannoli Siciliana:


12 shells (Can be purchased in any Italian bakery)

For the Filling: 

3 cups ricotta cheese

1/2 cup powdered sugar

1/4 cup cinnamon

1/2 tablespoon vanilla

3 tablespoons citron peel, chopped 

3 tablespoons orange peel, chopped

6 glazed cherries, chopped


Mix ricotta thoroughly with sifted dry ingredients. Add vanilla and fruit peel. Mix and blend well. (A little grated pistachio may be added if desired.) Chill in refrigerator before filling shells. Decorate each end with a piece of glazed cherry and sprinkle shells with powdered sugar. Refrigerate until ready to serve. 

Football Mania: Cha Cha Chili

Last but certainly not least in my Football Mania Menu series, my Cha Cha Chili! A dish that is both comforting and easy, the trick is here to give it plenty of time to simmer so that all of the flavors have the chance to mingle and meet. It's easy enough that you can get it going the morning of the big game and let it simmer away while you get the rest of the party ready, or you can make it the night before and warm it right before guest arrive. I recommend arranging a do-it-yourself topping bar for guests to customize their own personal chili toppings with the suggested toppings below!

Cha Cha Chili


  • 1 pound lean, ground beef (or substitute ground turkey)
  • 1 sweet onion, diced
  • 1 garlic clove, minced
  • 1/2 green pepper, chopped
  • 16 ounces fire roasted diced tomatoes
  • 1 (6 oz) can tomato paste + 1 can (6 oz) water
  • 2 bay leaves
  • 1 tablespoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 can red kidney beans
  • 1 can pinto beans


  • Sour cream (reduced fat)
  • Cilantro, chopped
  • Sharp Cheddar, grated
  • Chives


Heat olive oil in a large pot over medium heat, and sauté garlic and onions until translucent. Add meat and thoroughly cook through. Add green pepper and continue to cook until softened. Stir in tomatoes, tomato paste and remaining seasonings. Simmer for 1 1/2 hours. Mix in kidney and pinto beans and juice. Continue to cook for another 30 minutes. Toppings are to be used as desired.
